Pineapple-Upside-Down Cake


Today, hubby had a sudden hankering for Pineapple-Upside-Down Cake. Good ole google turned up the recipe by Nigella: www.nigella.com/recipes/view/pineapple-upside-down-cake-51.  It was very easy to do. Adapted recipe below ...

Pineapple Upside Down Cake ... soft, moist, yummy & nostalgic!

Ingredients
1 Tbsp of melted butter (for buttering dish)
2 Tbsp brown sugar
4 slices of pineapple (from tin) + 3 Tbsp of juice
6 glace cherries, halved.

100g cake flour
1 tsp baking powder
1/4 tsp baking soda
100g butter, softened
100g caster sugar
2 eggs

Method
1) Preheat oven to 200°C.
2) Butter a 9" tin or dish that is NOT loose-bottomed/springform (or it'll leak).  As I was using a Pyrex dish for the cake, I microwaved 1 Tbsp of butter in it, then spread it around. 
3) Sprinkle brown sugar over the base & arrange the pineapple & cherries nicely.

4) Put all the other ingredients in a mixer/processor & mix till batter is smooth.
5) Pour the batter carefully over the fruit in the tin.
6) Bake for 30 mins.
7) To unmold, loosen edges with a knife, put a plate over the top, and flip over. Voila!
