Ingredients A
1.5 Cup plain flour
1/2 tsp cream of tartar
1/2 tsp baking soda
pinch of salt (omit if using salted butter)
Ingredients B
1/3 Cup unsalted butter, softened
1/2 Cup sugar (equal mix of brown & white)
1/3 Cup vegetable oil
1/2 tsp vanilla essence
1 egg yolk
Ingredients C
1/2 Cup chopped macadamia nuts
1/2 Cup white chocolate chips (keep them chilled else they're too soft)
Method
1) Preheat oven to 170°C.
2) Mix Ingredients A together & set aside.
3) In a large bowl, stir Ingredients B till well-mixed. Stir in Ingredients A & C
4) Drop 1.5" balls of dough on cookie sheet (space for spreading). Flatten balls slightly.
5) Bake for 15 - 18 minutes.
This recipe makes 32 cookies. Soft if baked for 12 mins, very crisp if baked for 15-18 mins (or till slightly golden) & cooled.
