This recipe is the easiest and tastiest ever, and one of the kids' firm favourites.
Wash & dry 500g chicken drumlets. Put inside a clean sandwich bag and pour in 1/4 C Lee Kum Kee Chicken Marinade. Twist the bag top to seal out air, and leave in fridge for several hours. To cook, empty contents into a pot, top up with some water to just cover chicken. Bring to a boil and simmer till chicken is cooked and sauce has thickened a little (~ 20 mins). For an extra "kick", throw in 2 red chillies and a handful of dried wolfberries (kei chi) to cook with chicken. Serve with steamed white rice.
